Beef Stew

Ingredients (serves 6)

  • 2 – 3 lbs cubed beef
  • 1 sweet potato, chopped
  • 2 carrots, chopped
  • 2 tomatoes, chopped (or a 14.5-ounce can diced tomatoes)
  • 1 white onion, peeled & chopped
  • 1 green pepper, chopped
  • 5 garlic cloves, chopped
  • 1 6-ounce can tomato paste
  • 1 cup beef stock
  • 1 cup boiling water
  • 1 tbsp oregano
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp dried rosemary

Steps

  1. Place chopped sweet potato, carrots, tomatoes, onion, green pepper, and garlic in the crock pot, and top with the cubed beef.
  2. In a mixing bowl, combine tomato paste, beef stock, boiling water and spices. Mix well and pour over meat and vegetables in the crock pot.
  3. Cover and cook on low for 7­8 hours, or until the meat reaches desired tenderness.
  4. Enjoy!
