Beef Stew
Ingredients (serves 6)
- 2 – 3 lbs cubed beef
- 1 sweet potato, chopped
- 2 carrots, chopped
- 2 tomatoes, chopped (or a 14.5-ounce can diced tomatoes)
- 1 white onion, peeled & chopped
- 1 green pepper, chopped
- 5 garlic cloves, chopped
- 1 6-ounce can tomato paste
- 1 cup beef stock
- 1 cup boiling water
- 1 tbsp oregano
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp garlic powder
- 1 tbsp dried rosemary
Steps
- Place chopped sweet potato, carrots, tomatoes, onion, green pepper, and garlic in the crock pot, and top with the cubed beef.
- In a mixing bowl, combine tomato paste, beef stock, boiling water and spices. Mix well and pour over meat and vegetables in the crock pot.
- Cover and cook on low for 78 hours, or until the meat reaches desired tenderness.
